Draw a value stream
map for a restaurant which falls in the category of high-end specialty .Create
a Box Score (The Lean CFO) for your restaurant. Identify 5 – 7 value
stream performance measurements, (do not attempt to calculate a specific number
for each measurement), Value Stream Capacity categories, and Value Stream Financial
categories. Link the specific value stream performance measurements to the
appropriate financial category.
When thinking about the restaurant assignment, start with the customer order (expectation). When does that start? That is the start of your value stream map (flow). Since this is a high-end restaurant, this probably starts with making the reservation (perhaps a special occasion). Then think about work cells in this type of restaurant ( functional areas; valet parking, host/hostess reception, bar area for drinks, dining room, kitchen, payment, departure, etc.). Refer to the Box Score example on page 4 of CFO. Identify operational and capacity metrics (no need to identify specific numbers) and consider the content or make-up of each of the financial categories. Again, no need to attempt to calculate actual results
