INSTRUCTIONS:
All statements must be justified with citations placed into the corresponding text. You must provide the corresponding reference list using APA or AMA format.
(Provide a minimum of 12 references with at least 8 peer-reviewed articles (when available use the most recent) and 4 from government websites or textbooks. Each response should be 1-2 paragraphs. Consider eat-in restaurants of various categories Fast Food, Fast Casual, and Casual Dining when addressing the following:
The physical environment of a restaurant affects how people eat in terms of type of food selections, how fast or slow they eat, time they spend in the restaurant for each of the following: (15 points)
Explain how the restaurant decor influences customers – amount, pace, type of food…etc.
Indicate how noise-level and cooking odors impact eating
Discuss the role of menu design on individual’s choices for high-calorie foods.
Indicate how ambiance such as lighting and music affect eating in terms of pace (speed) and length of time at the restaurant
Describe how wall color and décor influences eating:amount of food, pace, types of food…etc.
All statements need to be justified by research articles from peer-reviewed journals (or government websites for statistics) focusing on nutrition and eating behavior. Examples are the following (but not limited to): Appetite, American Journal of Health Promotion, International Journal of Environmental Research and Public Health. Public Health Nutrition, Journal of Consumer Behavior, Obesity Research, Journal of Nutrition Education Behavior.
Each part A-E of the physical environment should be written with in your own words using justification from peer-reviewed articles (no direct quotes). You should paraphrase what the authors are saying.
This project is about the connection of obesity and restaurant internal environment. It is not about customer satisfaction and marketing. Consider the person has chosen to eat at the restaurant and enjoys the noise level and type of music. For example, some people choose a sports bar with televisions and other choose a restaurant with low background music. Some marketing journal have information about consuming more food and length of stay. For example, the Journal of Restaurant and Food Service Marketing may have some articles about length of stay and amount of food or alcohol consumed
