This university is very STEM focused so a topic inclined towards STEM would be preferable.
A topic I thought of is robotics –
1) I’ve done summer courses that introduced me to robotics a few years ago
2) Did online courses related to electrical engineering as I liked that part of robotics
3) I tinker around at home trying to learn on my own and make small projects, with help from the internet
4) Actively participated in school robotics club and competitions (Top 8 in a National Robotics Championship)
