She is a fisty, short, 49 red headed lady that demanded respect. She was a police officer in her younger days, so, she did not take any crap from kids or adults. I remember when I was in the 7th grade, I think, I got into an argument with her. We butted heads and I said some really harsh words, that I cannot repeat here, to her. We did not speak again until I was an adult with my own children, that is how stubborn we both are. We had Easter at her house where my children hunted for eggs in her back yard. This is when I first tried her wonderful Cheesecake. Now I must tell you about my mother, because my Great Aunt Nancy gave her the recipe. My mom stands 54, brown, blonde, and gray hair, she has worked hard all her life, she is 20 years older than me, and no one really messes with her. She takes care of everything and everyone. This copy has been written on, scribbled on, and notes has been added. Here is a scanned copy of the recipe to help make this as if my Great Aunt Nancy and my mom were handing it down to the next generation.

Hendrix 3 Now let us make some delicious cheesecake. The first thing you will need to do is gather the ingredients and utensils that is needed. You need a mixing bowl, measuring cups, measuring spoons, and a mixer, soft spatula, Pie pans, the two -piece ones, and a spoon. Then for the ingredients you will need Cream Cheese, you want to let the cream cheese soften at room temperature, Sour cream, lemon juice, eggs, gram cracker crumbs, vanilla, sugar, and butter. These last ingredients are optional. They are raspberry pulp, cornstarch, sugar, You need to preheat oven to 350, may vary at different elevations. Have the cream cheese warming up to room temperature as you start with the crust. You will need the pie pans, the two-piece spring pan. We will make the Gram cracker crust. You will need 4 cups of the gram cracker crumbles, 8 TBSP of sugar, 1 cup of melted butter, but not boiling. Mix the crumbs and sugar together, then pour the melted butter. Press firmly into the bottom of the spring pans. Set them aside. Now you want to set up the electric mixer, bowl, soft spatula, spoon, and the measuring utensils to start the first part of the filling. You will need 2-8oz cream cheese, 2 eggs, cup sugar plus 2 TBSP of sugar, 2 tsp of vanilla, 1 TBSP Lemon juice. Put the cream cheese, that is soft and at room temperature into mixer bowl and mix until fluffy. Add eggs, one at a time, mixing after each egg. Add Sugar, vanilla, and lemon juice. Mix, beat, well. Wiping the edges of the bowl with the soft spatula as you go. Pour the mixture into the spring pans, which already have the crust in them. Bake them for 20 minutes. If they are not jiggly cool for 5 minutes, but if they are jiggly try baking for 5 more minutes than 2 minutes each time until they do not jiggle. While they are baking you need to wash the mixing bowl, spatula, and the spoon. Pull out of oven but leave it on. Set them on the counter to cool while we mix the second step. Now you
Hendrix 4need to mix 16oz = 2 cups of Sour cream, 4 TBSP Sugar, and 2 tsp vanilla. Blend together. Then spread over the cream cheese mixture and bake for 5 minutes. Then chill thoroughly. (HINT) This is not a recipe that you can double. If you want to make two you must mix one up at a time. The Glaze, this is completely optional. We do not make it, but if you want it, you will need 1 cup (of your choice of fruit pulp) example is Raspberry pulp, 1TBSP cornstarch, and cup of sugar. Cook until thick like syrup, and chill thoroughly add to the top of cheesecake and chill for at least 6 hours. Now say thank you to my Great Aunt Nancy, because you are about to eat the best cheesecake in the world in my opinion. My mom has to make 4 or 5 cheesecakes for Thanksgiving and Christmas just so there is enough for us all, because you can never eat just one piece of this thick, creamy, amazing mouthwatering, stomach so full that it hurts, yet you still go back for thirds.
