Each week you will have a module assignment. The topic will vary depending on our chapter(s) of the week or hot topics in nutrition. These assignments should be written in essay format, and please be mindful of spelling, grammar, and citations. I expect you to use citation (any style is fine) for resources you draw from – and include a reference list (complete reference, not just a website). Thank you!
Module Assignment #4
This activity is designed to assist you in developing an empathy for patients who are required to consume modified diets because of their health issues.
First, consume a 2-gram (2,000 mg) sodium diet for 2 days. This means 2-grams/day or 4 grams over 2 days (4,000 mg for 2 days).

, as well as your reactions to the diet. You do not need to use SparkPeople again (but you may if you want to) – but you do need to keep track of the food you consume and the amount of sodium in each food/amount of each food. You will be expected to turn in the food record with the amount of sodium for EACH food (and a total for each day).
Second, you will write a reflection paper on the experience, answering the following questions:
How did you prepare for your 2-day diet? (or if you didnt prepare, discuss why you didnt)
What did you do to stay on the diet?
How did you figure out how much sodium was in the foods you ate?
How did you feel?
What was difficult? What were your specific challenges or surprises?
What was easy that you expected to be difficult? What did you gain from this activity that you can use in your profession or in your interaction with people on special diets?
If you were asked to try this diet for a week, a month, a year – or the rest of your life — what would be your reaction now that youve tried it for two days? How does that reaction differ from your expectations of the diet before you tried it?
Obviously, if this diet poses a health risk for you, please do not do it. As an alternative, please interview someone who is required to be on a special diet (not necessarily low sodium) and ask them the above questions. Write a 2-3 page (12 point font, double spaced) analysis of this activity and respond to the questions above.
